I really have no idea why they call it 'Fan Pak Choy'. It looks nothing like a fan I've ever seen. Unless...back in the days they used veggies to flap at themselves.
Well, the weird name aside, fan pak choy has a good shelf-life - you don't have to worry too much about it rotting away to dust! To quote, "From dust thou art and unto dust thou shalt return." It's a plant with nice compact green leaves with a variety of 'green stalks' (but from what I've seen, I'm pretty sure white isn't green). It's crispily chewy when raw, tastes sweet and mustard-y - please note that I'm not referring to the sauce. When cooked (stir-frying is highly recommended), it softens and tastes similar cabbage and spinach.
Talk about a transition.
