Lacinato Kale is a type of kale that has a permanent place in the tradition of Italian cuisine. This kale is commonly used in pasta and soup, but eat it raw in a salad if you're lazy. It's  known as 'dinosaur kale' because of its dark blue-green leaves with an 'embossed texture', also meaning that the bumpy leaves somewhat look like dinosaur skin - no, it doesn't taste like it, but then again, how would we know? They are extinct.
